From Frozen Slow Cooker Pork Roast Chili

Say what?! You can put a frozen roast in the crock pot? Why yes you can! I love using my slow cooker, especially when we have a busy day ahead. The only problem? Remembering to take the roast out of the freezer. What's a girl to do? Google. A little googling on "frozen roast in slow cooker” and Hallelujah! It is possible. My frozen brick of pork went into the pot with "a little of this...a little of that" and five minutes of prep. How was it? Ask the very small container of leftovers in the fridge. Enjoy!

Pork Roast Chili 

Ingredients:
  • Pork Roast (I used shoulder)
  • 1 cup or so of your favorite salsa
  • 3-4 tablespoons of taco seasoning
  • 1 onion finely chopped
  • 3 garlic cloves finely chopped
  • 1 can of black beans drained
  • 1 cup of water
Throw it all in the slow cooker and cook on high for 6 hours. I like to take the roast out at the five hour mark and trim off all of the fat. Then you can cube or shred the pork, put back in pot and check for seasoning. Leave off the lid the last hour to thicken your stock.  Serve over rice or polenta.

Fun tip!
Use an ice-cream scoop to plate your rice.  Makes a fun round ball on the plate...the kids will be impressed!
